10 Things I Learned During Week One of the Paleo Challenge

  1. I will, in a moment of desperation, consider using a spoon to eat the maple syrup left on my children’s breakfast plate. Oh, who am I kidding? I was going to lick it straight off the plate.
  2. I am capable of walking away from the maple syrup. This makes me quite proud of myself but I am still in awe of Dr. Jen who stayed Paleo-strong at A RED SOX GAME (!!!!). We always knew she rocked, but this just sealed it!
  3. There is such a thing as too many eggs. Sure they’re delicious. Yes, they’re convenient and versatile. They’re called the incredible edible egg for a reason. But it is entirely possible that eating a dozen eggs in the first three days of the challenge was a wee bit excessive. Which leads me to…
  4. Preparation is key. I spent way too much time on my farewell your and not nearly enough time preparing food and snacks for my first few days. Hence the dozen eggs.
  5. Pinterest is awesome. Trying new recipes is fantastic. Attempting to make multiple recipes at once which all include some elaborate sauce made from scratch is only a recipe for disaster. I’m pretty sure I dirtied every pot, pan, mixing bowl and measuring cup in my house attempting to make White Chicken Chili, BBQ Stuffed Sweet Potatoes, Tangy BBQ Sauce and Tacos at the same time.
  6. Not all coffee is considered equal. When you take out the cream and sugar there is a difference. I won’t digress into the great coffee debate but I will say – some coffee is crap.
  7. I don’t miss the dairy the way I expected. I was afraid cheese would be the hardest thing for me to give up but I haven’t missed it at a single meal.
  8. I did talk about a swimming pool of bread. (We all have our low points – don’t judge.)
  9. Speaking of low points, I will quote Dr. Stephanie: “When the uncontrollable urge for chocolate comes, just go to bed.” Please note – this is NOT good advice at 10 in the morning.
  10. There is safety in numbers. I wouldn’t have made it through this week without Leah’s homemade ‘mookies’ or some of the great tips our practice members have posted on Facebook. Having the support at Crossroads of us all being in this challenge together THIS is what is getting me through and making this fun. Thank you to everyone and keep up the great work!!
