Our 10-day cleanse is under way! To kick off the New Year many of our practice members have chosen to re-boot their eating habits with the 10 Day Cleanse from Standard Process. Our new cleanse has two options: a sugar buster formula or a supplement kit aimed to promote a healthier inflammation response. With both cleanse options, practice members have eliminated dairy, grains, refined sugar and artificial ingredients and are eating LOTS of vegetables, clean protein and drinking healthy shakes. As I was preparing for the cleanse, I cooked a few meals in advance to make my week easier. Planning ahead is one key to a successful cleanse experience. I thought I would take a moment and share it with you here.
Although this is a cleanse-friendly dish, it is delicious enough for anyone and everyone to enjoy!
Dr. Stephanie’s take on an Egg Quiche with Sweet Potato Crust
Wash and peel one sweet potato. Cut into ¼” thick round slices and place/layer into the bottom of a pie plate. Cook for 15-20 minutes at 400 degrees. The pieces should be softened, but not mushy.
On the stove stop sautee/cook your choice of veggies with minced garlic, a tablespoon or so of olive oil, salt and pepper to your liking. My favorite combinations all include one vegetable and onion: mushroom and onion, asparagus and onion, broccoli and onion, red pepper and onion, spinach and onion. But feel free to be creative and try other veggie options. Just be sure to cook them a bit to soften before adding to your quiche.
Next whisk 6 eggs together with your cooked veggies and pour into the pie plate over your softened sweet potatoes. Reduce heat to 350 degrees and bake 25-30 minutes on a middle rack until done. I usually eat a piece hot out of the oven, but I’ll eat my left overs cold for breakfast on the run. My teenagers prefer to warm theirs in the toaster oven.
P.S. When I’m not on a cleanse I love to splurge by adding some goat cheese to veggie quiche for a creamy, yummy breakfast treat!
